Enrique
Head Waiter | At Caravan Since 2011
Enrique started at Caravan of Dreams in 2011 as a 17-year-old busboy. He thought he’d never eat the food here. On his first day, he went to Mcdonald’s during his lunch break. A Caravan chef, quickly got offended. He demanded Enrique try his famous Caravan Burrito.

“What’s inside?” Enrique asked.

“Broccoli, mushrooms, etc.”

Enrique’s stomach contracted, but his job was on the line, so he conceded. After one bite, his life changed. He thought added chicken to the burrito; it tasted that good. Since that day in 2011, Enrique has lost 100 pounds, and he feels healthier than ever.

To Enrique, Caravan is home. Whether it’s regulars like John Joseph, the influential rock 'n' roll marathoner who’s been coming to the restaurant for decades, or the elderly woman with auburn hair who enjoys her daily morning coffee on the table outside, this is Enrique’s family.

Jaime suffered a traumatic brain injury in 2023.

Jaime moved to New York in 2003. Two decades later, in 2023, Jaime suffered a traumatic brain injury after trying to defend a friend from a robber. He underwent two life-saving surgeries in hospital. Despite the difficulty of the surgeries, doctors were amazed by his quick recovery. When they asked about his lifestyle, Jaime revealed he'd been following a strict vegan diet for the past 15 years. Both the doctors and Jaime credited his remarkable recovery to his decade and a half commitment to plant-based eating.
Jaime's bond with Angel deepened during his time in the hospital. Throughout his recovery, Angel crafted special drinks made from a blend of brain-nourishing mushrooms, infused with love and gratitude. Jaime firmly believes these drinks, prepared with Angel's knowledge and care, were critical to his healing.

For Jaime, Caravan is a home away from home.
